Lavender Fields and Cheese, Oh My!


Imagine Provence. What comes to mind?

Endless fields of lavender, of course! AUCP Summer students spent a day in the life of Benoît Henocq, Provençal goat farmer. A morning spent strolling through lavender fields was followed by an afternoon discovering cheese making on a Provençal goat farm. lavender chèvre provence

DSC_0161A former computer technician from Paris, Benoît dropped everything and moved to Provence seven years ago to raise goats in the countryside.

Benoît took great pleasure in sharing his passion for his animals, his farm and the high-quality food he makes. AUCP students explored the farm, visited the cheese-making facility and were treated to an organic farm-fresh lunch made entirely by Benoît. Fresh goat cheese on toast, rillettes de porc and apricot tarts with apricots straight from the garden, the group shared a convivial déjeuner under the trees à la provençale.

Some students had never set foot on a farm before! All agreed that it was a charming afternoon of discovery and learning about a way of life quite different from that of a typical  American university student.

AUCP excursions help students get out and about to discover and above all, experience numerous aspects of Provençal life outside of Aix-en-Provence and the AUCP walls. Past excursions this summer included a visit to the calanques of Cassis,the city of Marseille and the hilltop villages of Provence.
